Olivier Jacobs is indisputably one of the most in uential mixologists in Europe. His creations have won various prizes and a visit to his cosy cocktail bar Jigger’s is an absolute must.

For the Owl Distillery, Olivier Jacobs has come up with two signature cocktails on the basis of the Belgian Owl Spirit Drink, and we invite you to come and discover them in his cocktail bar in the heart of Ghent (www.jiggers.be).

We are proud to reveal his recipe so that you can get to work making it yourself : This cocktail is a twist on the classic gimlet. The Belgian Owl Spirit Drink is highlighted thanks to the minimal ad- dition of a preparation of fruit, herbs, honey and malic acid. Serving it ice cold creates a pleasant experience whilst still keeping the strength of the Spirit Drink.

  • 6 cl (2.10 oz) Belgian Owl spirit
  • 1.5 cl (0.53 oz) Peer/basil/honey cordial
  • Basil
  • Honey cordial
  • Dash of absinth
  • Dash of chocolate bitters

Blend on low for about 20 seconds. Pass through a ne sieve and add 20 g (0.70 oz) of malic acid.

Stir the ingredients in a mixing glass with ice, strain into a small coupe and pour the rest in a bottle so that the drink can be tasted cold at your leisure. Garnish with a slice of pear and a basil leaf if you wish.
